Mom’s Famous Banana Bread

This week, instead of monkey bread (from last week’s issue), try out my mom’s delicious banana bread recipe.

Preheat Oven to 350 F

Mix together: 1 ¾ cups flour 2 ¼ teaspoon double acting baking powder 1/2 teaspoon salt

Blend until creamy: 1/3 cup butter 2/3 cup sugar

Beat in: 1 egg 1 ½ -2 cups banana

Mix together

Optionally add: 1/2 cups nuts or chopped dried apricots or chocolate chips

Place the batter in a greased bread pan

Bake for 1 hour.

Voila!
